The take

Chef André Stolle — six times Michelin-starred across earlier kitchens including Se7en Oceans — opened THE LISBETH on the historic Deichstraße in 2021, reworking Hamburg and North German classics rather than reaching for French haute cuisine. The four-to-five course set menu (with a six-course option) reinterprets dishes like Labskaus and Pannfisch with real technique, without losing the comfort-food heart of them.

Around eight tables in an intimate, laid-back room — book ahead, seating is genuinely limited. On the list on reputation alone; still to visit.
