The take

Thomas Bühner spent years at the top of German gastronomy with the original La Vie in Osnabrück before taking the concept to Taipei; this Düsseldorf outpost, opened in May 2025 on the ONE METRO Campus with head chef Timo Fritsche, marks his return to Germany. The room — Kitzig Design Studios, marble counters, a glass-fronted open kitchen — matches the ambition of the food: regional, largely zero-waste, and built on twin evening menus that fold French technique into Asian seasoning.

Fritsche, who ran the Osnabrück kitchen under Bühner from 2015 to 2018 and later cooked at Igniv by Andreas Caminada, has real technique to back up the concept. Earned a Michelin star shortly after opening — a fast start that tracks.
