The take

Named for the Grand Duchy of Berg, the historical territory that once had Düsseldorf as its capital, The Duchy occupies the first floor of the Capella-run Breidenbacher Hof overlooking Heinrich-Heine-Allee. The kitchen under Philipp Ferber runs a genuinely wide brasserie repertoire — sashimi and ceviche alongside steak tartare and ravioli — with a real farm-to-table backbone: the hotel keeps its own chickens, cows and a vineyard.

The Raw Bar is the centrepiece rather than an afterthought — oysters, caviar and champagne for a break between Kö shopping, or a full dinner at the marble counter. Not yet visited, but the combination of pedigree and reputation earns it a place on the list.
